Maple-Honey Ribs

1 cup maple syrup

½ cup honey

1 oz. brown sugar

1½ tsp. Worchestershire sauce

¾ tsp. black pepper

¾ tsp. dry mustard

1 bay leaf

dash of hot pepper sauce

12 lbs. back ribs

salt, pepper and granulated garlic to taste

Combine first eight ingredients in saucepan. Stir and simmer for 45 minutes. Strain through seive. Set aside.

Season ribs with salt, pepper and garlic. Arrange on a rack in a roasting pan. Add water to pan to below rim. Cover and bake at 325° F for 1½ hours. Remove from pan.

Brush ribs with glaze and grill or broil until browned.
