Select a 5 to 7 pound Penn Avenue Meats Smoked Ham. Place ham, fat side up, in roasting pan. Insert meat thermometer so the bulb reaches the center of the thickest part. Be careful that the bulb does not rest in fat or on bone. Roast, uncovered, in a 325° oven until the meat thermometer registers 130° F. (approximately 2-½ hours for Semi-Boneless Ham and 2 hours for Party Ham.) A half hour before ham is done, remove from oven and slash through the fat with a sharp knife in a diamond pattern. Insert whole cloves in each "diamond" and brush with honey glaze. Return to oven to finish baking and to set glaze. * Country Style Boneless, Party Ham, Semi-Boneless or Skinless and Shankless may be used. | |||

Honey-Glaze 1 cup honey 1 tsp. dry mustard 3 Tbs. frozen concentrated orange juice | |||

Combine ingredients, stirring until smooth. Brush on ham, making sure that glaze seeps through diamond shapes. | |||
