2 cups baked Penn Ave. Meats Ham, minced 4 Tbs. butter salt & pepper to taste 2 Tbs. minced parsley |
1 cup diced cooked potatoes ½ cup minced onion 1/3 cup each of chopped green and red bell pepper | |||

Combine ham, potatoes, onion, pepper, parsley, salt and pepper in a bowl. Mix thoroughly. In a heavy skillet, melt 6 Tbs. butter over medium heat. Add the ham mixture and brown, stirring gently. Reduce the heat and simmer the hash for 15 minutes. Top with "sunny-side-up" eggs if desired. Serves 4. | ||||
