Chicken Hawaiian NYC

chicken breast halves,

(1 per serving)

1 cup corn flakes

1/3 tsp. curry powder

1/3 cup orange/pineapple juice

concentrate, thawed

salt

1 egg

½ cup flaked coconut

¼ cup meled butter

Rinse and dry chicken, place in shallow pan or glass baking dish. Sprinkle with salt. Beat egg and add pineapple/orange juice. Do not exceed one third cup. Spoon over chicken and place in refrigerator. Marinate for at least one hour, basting occasionally.

Place 1 cup corn flakes crumbs, ½ cup flaked coconut, 1/3 tsp. curry powder in a flat bowl, mixing well. Coat marinated chicken well and place skin side up on a flat baking pan. Spoon ¼ cup melted butter over chicken. Bake 1 hour in 350°F oven.

This recipe is great served with rice and fresh green vegetables and a salad with sliced navel oranges, sliced sweet onion and French or Italian dressing.
