Basque Skillet Dinner

2 lbs. sweet Italian sausage

1 cup chopped onion

1 cup chopped green pepper

4 medium potatoes diced

2 - one pound cans tomatoes

1¼ cups water

2 tsp. lemon juice

1 or 2 beef bouillon cubes

½ tsp. thyme

salt & freshly ground pepper to taste

Cut sausage into bite-sized pieces and brown in skillet. Add onions and peppers and cook until tender. Add remaining ingredients; cover and simmer 30-45 minutes. Retains flavor well for reheating.

Serves 6 people.
