1 - 3 to 4 lb. eye of round roast with large pocket cut lengthwise through center ¼ lb. chopped pepperoni ½ chopped onion ½ chopped green pepper ½ cup diced cooked ham 1 clove garlic, minced ½ stalk celery, chopped |
dash celery salt dash freshly ground pepper 2 pinches each basil & oregano 1 Tbs. Worchestershire sauce 2 tsp. paprika 2 tsp. bacon drippings 2 Tbs. flour 2 cups drippings (water if necessary) | ||||

Combine pepperoni, onion, green pepper, ham, garlic and celery. Season with celery salt & freshly ground pepper. Add basil, oregano and Worchestershire sauce and mix well. Stuff pocket in roast with filling. Rub roast with seasoning and Worchestershire sauce. Brown in bacon drippings and cover with foil, wrapping roast loosely. Place in oven and roast at 325° F for 2½ hours. When roast is done, brown flour in a pan. Stir in drippings and water and cook over medium heat, stirring constantly. Serve with roast.
