Filet Mignon

To roast a whole filet:

A whole filet is approximately 3½ pounds, trimmed. Sprinkle with salt and pepper. Melt a half stick of butter in roasting pan and sear meat on all sides for about 5 to 6 minutes on high heat.

Place in a pre-heated 425°F oven for 18-20 minutes, basting every 5 minutes.

Let stand for 10 minutes before carving!
